Incase you haven’t noticed my posts have been few and far between. That is because I am working on a completely new website! It will feature tips and inspiration for entertaining and simple and delicious recipes anyone can create!

…fried goat cheese that is.

 

Here is another cheese option. Because lets face it, you can never get enough cheese. Unless of course you are one of those rare breeds who cringes at the site of the tangy greatness. (Never understood those kinds).

This fried goat cheese is perfect for a quick appetizer, a lunch salad, or a light summer meal with a nice glass of Pinot Grigio.

It is easy enough to make. Here’s how:

Slice goat cheese about 1/2 inch thick.Coat in flour, egg, and panko bread crumbs… much like you would make  a chicken cutlet. Once the goat cheese pieces are all coated, place on a plate and in the fridge for up to an hour. Right before serving heat olive oil in a large sauté pan. Once the oil is hot, fry the goat cheese, about 2 minutes on each side. Place on top of a salad of fancy greens dressed with a simple vinaigrette. For this salad I whisked together extra-virgin olive oil, freshly squeezed lemon juice, and salt to taste.

 

 

 

 

 

 

 

 

A little twist on your typical summer veggie dish. Plus another great way to get your picky eaters to eat their vegetables.

2 egg whites

1/3 cup skim milk

1-2 cups of seasoned panko breadcrumbs

2 medium zucchini, cut into eighths lengthwise

extra-virgin olive oil

1/4 teaspoon of salt

1 lemon, quartered

Preheat oven to 450F. In a medium bowl, whisk together milk and egg whites. Place breadcrumbs on a separate plate. Dip zucchini wedges in egg mixture. Toss gently until coated. Next place zucchini on bread crumbs and toss until coated. You may need to use your fingertips to allow breadcrumbs to adhere. Even if they are not completely coated, you will taste enough crunch once cooked.

Coat a large baking sheet with cooking spray or layer with a piece of parchment paper. Arrange zucchini on tray and drizzle with a little extra-virgin olive oil. Bake until golden brown and fork tender, about 12 minutes. Sprinkle with salt and a squeeze of lemon.

These go great with chipotle mayo. I ended up finishing both zucchini solo! Sorry family, will make again!

The  fourth of July is almost here! We, along with most of New England, are going on a road trip to Cape Cod! If unprepared, we will face hours upon hours of traffic, a restless 3-year-old, and a very impatient husband. So, to make the trip down more enjoyable, I ventured to Target and put together a little care package.

The Car Care Package:

The adult care package includes some good chocolate, cold drinks, old-fashioned candy, and home-made Chex mix. The red bucket is actually an ice-bucket which will be great upon our arrival to the hotel…. champagne anyone?

For the kiddos we have some oh-so-necessary entertainment (including stickers to decorate the pail), favorite snacks, juice boxes, and of course wipes. The bucket is a sand pail with a shovel. Great for the beach!

Side note. There should be a tutorial on how to shop at Target without buying the added ‘things I didn’t know I actually needed’. I would love to meet the person who can walk through Target purchasing only what they initially walked in for. If you have any tips on this PLEASE let me know!!!

When I think of Chex mix, I usually start singing “you’re the one thing, I can’t get enough of”. OK sorry I had to.

Anyways here is a great easy recipe for homemade Chex mix. 

3 cups Corn Chex cereal

3 cups Wheat Chex cereal

2.5 cups of Multigrain Cheerios (this gives it just the slightest sweet taste)

1 cup mixed nuts

1 cup of Snyder’s of Hannover honey mustard pretzel pieces (this is the secret ingredient)

1 cup garlic-flavored bagel chips broken into 1-inch pieces

6 tablespoons melted butter

2 tablespoons Worcestershire sauce

1.5 teaspoons of salt

3/4 teaspoon garlic powder

1/2 teaspoon onion powder

Heat over to 250F. Mix together melted butter, Worcestershire sauce, and spices. In a large ungreased roasting pan spread the butter mixture on the bottom. Gradually stir in the remaining ingredients until evenly coated. They may look a little dry but will be fine once cooked. Bake for 1 hour, stirring every 15 minutes. Store in airtight container.

OK, I really don’t see how it could get any better. Quick, easy, delicious, fun, summer inspired, and alcoholic. Although I won’t be enjoying one of these babies until the baby arrives, just a few more months, I think I have to make them for my next bbq. Can you say hit of the party?!

Strawberry Margarita Popsicle

Pour and freeze Mike’s Hard Lemonade Strawberry Margarita into a Dixie cup and freeze for two hours. After the two hours, insert popsicle stick. Freeze for another two hours until the popsicle has solidified. Right before serving, garnish with a lime and salt. Serve!

 

Corona Beer Popsicle

Open a Corona and pour it into any form, wait 2 hours to solidify slightly and insert popsicle stick. Freeze for another two hours. Garnish with a lime and serve!
